Ingredients
  

Meat and Potatoes

  • 2 lbs beef stew meat cut into bite-sized pieces
  • 1.5 lbs baby potatoes halved

Dairy & Liquids

  • 4 tablespoons unsalted butter melted
  • 6 cloves garlic minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon crushed red pepper flakes optional, for heat
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water for thickening
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions
 

  • Season beef with salt, pepper, paprika, onion powder, oregano, thyme, and red pepper flakes.
  • Add beef, potatoes, melted butter, garlic, broth, and Worcestershire to slow cooker; stir to combine.
  • Cook on low for 6-8 hours or high for 3-4 hours until beef is tender and potatoes are soft.
  • If desired, stir in cornstarch slurry and cook for 15 minutes to thicken sauce.
  • Garnish with chopped parsley and serve warm.

Notes

For extra flavor, add a splash of red wine or a dash of hot sauce.
