Ingredients

  • 2 tablespoons fresh parsley, chopped (optional)

Dressing

  • 1/4 cup apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • to taste salt and freshly ground black pepper
  • 1/4 teaspoon celery seed (optional)

Instructions
 

  • Combine cabbage, carrot, onion, and parsley in a large bowl.
  • Whisk together vinegar, honey, oil, mustard, salt, pepper, and celery seed in a small bowl.
  • Pour dressing over vegetables and toss to coat evenly.
  • Let sit for 15 minutes to meld flavors and soften cabbage.
  • Serve chilled or at room temperature.
