Pumpkin Banana Oat Granola Bars

These wholesome granola bars combine pumpkin, bananas, and spices for a delicious, healthy snack perfect for on-the-go.

Ingredients
  

Dry ingredients

  • 2 1/2 cups quick cooking rolled oats
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon pumpkin pie spice

Wet ingredients

  • 1 cup overripe bananas, mashed about 2 medium bananas
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup or honey
  • 2 teaspoons vanilla extract
  • 2 tablespoons coconut oil
  • 1 cup pumpkin puree
  • 1/2 cup raisins

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  • Mix dry ingredients in a large bowl. In another bowl, combine wet ingredients and stir until smooth.
  • Combine wet and dry mixtures, then press into the prepared pan.
  • Bake for 20-25 minutes until golden. Cool completely before slicing.

Notes

Chill in the fridge for best results before slicing into bars.
