Ingredients

  • 1.5 cups red lentils, rinsed
  • 2 medium sweet potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, finely chopped
  • 3 cups vegetable broth
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp turmeric
  • to taste Salt and pepper
  • 3 cups baby spinach add at the end
  • 1 tbsp lemon juice

Instructions
 

  • Add lentils, sweet potatoes, diced tomatoes, onion, broth, cumin, paprika, turmeric, salt, and pepper to the crockpot. Mix well.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until lentils and sweet potatoes are tender.
  • Add spinach during the last 15 minutes, then stir in lemon juice before serving.
