Instructions
Bring the beef to room temperature, then season with salt and pepper.
Heat olive oil in a skillet, sear the beef 3-4 minutes per side, then transfer to oven at 400°F (200°C) for 15-20 minutes.
While roasting, melt butter and cook minced garlic for 1-2 minutes to make the garlic butter sauce.
Rest the beef for 10-15 minutes, then slice into 1-inch medallions, drizzle with garlic butter, and garnish with parsley.
