Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Mix dry ingredients and oats in a bowl. Beat butter and sugar until fluffy, then add apple, egg, and vanilla.
Gradually add dry mixture to wet ingredients, then stir in cranberries.
Drop tablespoonfuls onto sheets, flatten slightly, and bake for 12-15 minutes until golden.
Cool on wire racks for 2-3 minutes, then transfer to cool completely.
Notes
For best results, toast oats before adding to the mixture for extra flavor.
