Ingredients
  

dry ingredients

  • 1/2 cup whole wheat pastry flour or white wheat flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

wet ingredients

  • 4 tablespoons butter, softened
  • 1/2 cup packed brown sugar
  • 1 large apple, peeled, cored and grated
  • 1 large egg
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup dried cranberries

Instructions
 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Mix dry ingredients and oats in a bowl. Beat butter and sugar until fluffy, then add apple, egg, and vanilla.
  • Gradually add dry mixture to wet ingredients, then stir in cranberries.
  • Drop tablespoonfuls onto sheets, flatten slightly, and bake for 12-15 minutes until golden.
  • Cool on wire racks for 2-3 minutes, then transfer to cool completely.

Notes

For best results, toast oats before adding to the mixture for extra flavor.
