Witches Cauldron Casserole

Ingredients
  

Meat and Vegetables

  • 1 pound beef stew meat
  • 2 cups baby carrots
  • 2 ribs celery, sliced or diced
  • 2 Tbsp minced dried onion
  • 1 tsp kosher salt
  • 1 tsp sugar
  • 2/3 cup water
  • 1 can (10.5 oz) Campbell’s tomato soup
  • 2 Tbsp minute tapioca* (or ¼ cup flour) Use flour if preferred
  • 1.5 to 1.75 pounds peeled Russet potatoes
  • 2 Tbsp butter
  • ¼ cup milk
  • to taste Salt and pepper

Instructions
 

  • Add beef, vegetables, salt, water, tomato soup, and tapioca to slow cooker. Stir well.
  • Place potatoes on top and cook on low for 5-7 hours until tender.
  • Mash potatoes with butter, milk, salt, and pepper. Serve beef mixture over mashed potatoes.

Notes

For a thicker sauce, add more tapioca or flour during cooking.
