Ingredients
  

Meat

  • 1 lb Lean Ground Turkey
  • 1 pkg Frozen Seasoned Corn and Black Bean Blend (12 oz, thawed)
  • 1 can Low-Sodium Diced or Crushed Tomatoes (28 oz)
  • 2 tbsp Chipotle Chiles in Adobo Sauce finely chopped
  • 1 tbsp Chili Powder
  • 1/2 tsp Sea Salt
  • 1/4 tsp Freshly Ground Black Pepper
  • 1/4 cup Water

Garnish

  • Fresh Cilantro and Sliced Green Onions

Optional

  • Nonstick Cooking Spray (Olive oil or Avocado oil)

Instructions
 

  • Heat a Dutch oven over medium-high heat, coat with cooking spray, and cook the turkey for 8 minutes until browned.
  • Add the thawed corn and black bean blend, sauté for 2 minutes.
  • Stir in chopped chipotle chiles, chili powder, salt, and pepper; cook briefly.
  • Add tomatoes and water, simmer for 3–5 minutes until thickened.
  • Ladle into bowls, garnish with cilantro and green onions, and serve.

Notes

For extra flavor, toast the spices before adding the liquids.
