Ingredients
  

Broth and grains

  • 1.5 cups Water
  • 1.25 tsp Curry powder
  • 0.75 tsp Table salt
  • 1 cup Uncooked couscous, plain variety

Canned chickpeas

  • 1 can Canned undrained chickpeas, rinsed and drained

Fruits and proteins

  • 1 medium Apple, unpeeled and diced
  • 0.5 pound Cooked skinless, boneless chicken breast, diced

Vegetables and herbs

  • 2 medium Uncooked scallions, sliced
  • 6 oz Fresh spinach

Dressing and oil

  • 3 tbsp Fresh lemon juice
  • 2 tsp Olive oil

Instructions
 

  • Bring water, 1 tsp curry powder, and 1/2 tsp salt to a boil. Add couscous, cover, remove from heat, and let stand 5 minutes. Fluff with a fork.
  • Mix chickpeas, apple, chicken, scallions, lemon juice, olive oil, remaining curry powder, and salt in a large bowl. Add cooked couscous and combine.
  • Divide spinach among plates and top with couscous salad. Serve immediately.

Notes

For extra flavor, toast the couscous lightly before cooking.
