Instructions
Bring water, 1 tsp curry powder, and 1/2 tsp salt to a boil. Add couscous, cover, remove from heat, and let stand 5 minutes. Fluff with a fork.
Mix chickpeas, apple, chicken, scallions, lemon juice, olive oil, remaining curry powder, and salt in a large bowl. Add cooked couscous and combine.
Divide spinach among plates and top with couscous salad. Serve immediately.
Notes
For extra flavor, toast the couscous lightly before cooking.
