  • 1 lb venison sausage (remove from casing)

Vegetables

  • 4 medium potatoes, diced
  • 1 chopped bell pepper
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Seasonings & Oil

  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme

Garnish

  • to taste Fresh parsley chopped parsley (for garnish)

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Add diced potatoes and cook until golden, about 10-12 minutes, stirring occasionally.
  • Add onion, bell pepper, and garlic; cook for 5 minutes until vegetables soften.
  • Add sausage, break it up, and cook until browned, about 7-10 minutes. Season with paprika, thyme, salt, and pepper.
  • Garnish with chopped parsley before serving.
