  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 diced zucchini
  • 1 diced yellow squash
  • 1 chopped red bell pepper
  • 1 cup broccoli florets
  • 1 14.5-ounce can diced tomatoes, undrained
  • 1 teaspoon dried oregano

  • 2 tablespoons olive oil

Instructions
 

  • Heat olive oil in a skillet; sauté onion and garlic until translucent.
  • Add ground beef; cook until browned, then drain excess fat.
  • Stir in vegetables; cook 5-7 minutes until tender.
  • Add tomatoes and oregano; season with salt and pepper; simmer 5 minutes.
