Vegan Gluten Free Oatmeal Cookies

Ingredients
  

Wet ingredients

  • 0.33 cup Maple syrup
  • 4 tbs Tahini

Dry ingredients

  • 1.25 cups Rolled oats divided
  • 1 pinch Sea salt

Instructions
 

  • Mix maple syrup, tahini, and sea salt until combined.
  • Grind ½ cup of oats into a rough flour and add to wet ingredients with remaining oats. Mix until combined.
  • Drop dough onto parchment-lined baking sheet, flatten into discs, leaving space between cookies.
  • Bake at 356°F (180°C) for 13-14 minutes until golden. Cool for 5 minutes, then transfer to wire rack to cool completely.

Store in an airtight container for up to 3 days.
