Ingredients

  • 1 bulb garlic top sliced off
  • 1.5 cups cashews soaked for 6-24 hours or 1 hour in boiling water
  • 1.5 cups vegetable broth
  • 0.25 cup nutritional yeast
  • 1 cup spinach
  • 1 bunch parsley
  • 0.5 lemon juice from half a lemon
  • 1 tsp salt
  • 0.5 tsp pepper
  • 3-4 servings cooked pasta of choice any pasta works here

Instructions
 

  • Preheat oven to 400°F (200°C). Roast garlic for 40 minutes.
  • Remove roasted garlic and blend with remaining sauce ingredients until smooth.
  • Toss the sauce with cooked pasta and serve garnished with parsley.

Notes

Ensure cashews are soaked for best blending consistency.
