Instructions
Preheat oven to 350°F (180°C). Line muffin pan with liners.
Chop two apples into ⅓-inch dice and grate one apple. Set aside.
Mix non-dairy milk, sugar, oil, and vanilla. Sift in dry ingredients and combine gently.
Fold in grated and chopped apples. Fill muffin liners and optionally top with cinnamon-sugar mixture.
Bake for 27 minutes until golden. Cool before serving.
Notes
Use ripe apples for best flavor. Do not overmix the batter.
