Ingredients
  

Fruits

  • 3 medium apples 2 chopped, 1 grated
  • 0.75 cup non-dairy milk any type
  • 0.75 cup sugar
  • 3 tablespoons olive oil or other vegetable oil
  • 2 teaspoons vanilla extract

Dry ingredients

  • 2 cups all-purpose flour or 50% all-purpose and 50% whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda optional
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 2 tablespoons sugar for topping (optional)

Instructions
 

  • Preheat oven to 350°F (180°C). Line muffin pan with liners.
  • Chop two apples into ⅓-inch dice and grate one apple. Set aside.
  • Mix non-dairy milk, sugar, oil, and vanilla. Sift in dry ingredients and combine gently.
  • Fold in grated and chopped apples. Fill muffin liners and optionally top with cinnamon-sugar mixture.
  • Bake for 27 minutes until golden. Cool before serving.

Notes

Use ripe apples for best flavor. Do not overmix the batter.
