  • 1 tablespoon olive oil for sautéing
  • 1 small onion, diced adds flavor
  • 1 medium bell pepper, diced adds freshness
  • 12 ounces breakfast sausage savory protein
  • 10 large eggs protein source
  • 1 cup shredded cheddar cheese adds creaminess
  • 4 large flour tortillas for wrapping
  • 1 medium avocado, diced for topping
  • to taste salt and pepper for seasoning
  • to taste salsa for dipping
  • to taste hot sauce for extra heat

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add diced onion and bell pepper; sauté for about 5 minutes until softened.
  • Add the breakfast sausage to the skillet; cook until browned, about 5 minutes.
  • In a separate bowl, beat the eggs and pour them into the skillet with sausage and veggies.
  • Stir in the shredded cheddar cheese until melted.
  • Warm the tortillas, spoon the mixture onto each, and roll tightly to form burritos.
