Wet ingredients

  • 1 large egg
  • ½ cup milk
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Apple filling

  • 1 cup chopped apples (about 1 medium apple)
  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions
 

  • Preheat oven to 375°F (190°C). Line a 12-cup muffin pan.
  • Mix dry ingredients in a bowl. Whisk wet ingredients separately.
  • Combine wet and dry; fold in apples. Prepare streusel topping.
  • Divide batter into muffin cups, add streusel on top.
  • Bake for 18-22 minutes; cool before serving.
