Instructions
Heat olive oil in a large saucepan over medium heat. Cook onion for 10 minutes until softened.
Add garlic and thyme; cook for 2 minutes until fragrant.
Add celery, carrots, potatoes, then pour in chicken stock. Season with salt and pepper. Simmer for 20 minutes until vegetables are tender.
Stir in beans and cook for 5 minutes. Add shredded chicken, then kale; cook until wilted, about 2 minutes.
Ladle into bowls, garnish with parsley, Parmesan, and thyme. Serve with toasted bread.
Notes
Feel free to add more herbs for extra flavor or adjust seasoning to taste.
