Ingredients
  

Pasta

  • 8 ounces penne pasta cooked and drained

Chicken

  • 1 pound boneless skinless chicken breast cut into ¾ inch pieces

Seasonings

  • ½ teaspoon salt divided
  • ½ teaspoon salt for seasoning the chicken
  • ¼ teaspoon black pepper
  • ½ teaspoon dried Italian seasoning blend

Other ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • ½ cup diced yellow onion
  • 1 tablespoon minced fresh garlic
  • 2 tablespoons tomato paste
  • 8.5 ounces julienne sliced sun-dried tomatoes packed in herb oil oils drained (approximately 1 cup)
  • 2 ounces fresh baby spinach lightly packed (approximately 2 cups)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese

Instructions
 

  • Cook pasta according to package instructions; drain and set aside.
  • Season chicken with salt, Italian seasoning, and black pepper; cook in olive oil until golden.
  • Sauté onion, garlic, tomato paste, sun-dried tomatoes, and spinach; deglaze with chicken broth, then add cream and simmer.
  • Mix in cooked pasta, chicken, and Parmesan until coated; serve hot.

Notes

For extra flavor, sprinkle with additional Parmesan or fresh herbs before serving.
