Ingredients
  

Protein

  • 12 oz Plant-based ground turkey
  • 1 cup Quinoa (uncooked)
  • 2 cups Water

Vegetables

  • ½ cup Onion (finely chopped)
  • 2 cloves Garlic (minced)
  • 1 tbsp Olive oil
  • 1 cup Shredded carrots
  • ¼ cup Green onions (sliced)

Sauces & Oils

  • 2 tbsp Soy sauce
  • 2 tbsp Hoisin sauce (vegan)
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 tbsp Olive oil
  • 2 tbsp Crushed peanuts

Instructions
 

  • Rinse quinoa and boil with water for 15 minutes.
  • Heat olive oil, cook onion and garlic 2 minutes.
  • Add plant-based turkey; cook 5 minutes, stirring.
  • Mix in sauces, shredded carrots, and cooked quinoa; cook 3 minutes.
  • Drizzle sesame oil, then spoon filling into lettuce leaves. Top with green onions and peanuts.

Notes

For extra flavor, add a squeeze of lime or fresh herbs.
