Ingredients
  

Meatballs

  • 1 pound ground turkey
  • 1 egg egg, lightly beaten
  • 2 tablespoons almond flour
  • 2 tablespoons Parmesan cheese, grated
  • 1 clove garlic, minced
  • 0.5 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 5 cups chicken broth
  • 2 cups fresh spinach, roughly chopped
  • 0.5 teaspoon salt (adjust to taste)
  • 0.25 teaspoon black pepper
  • 1 tablespoon Parmesan cheese, for garnish

Instructions
 

  • Mix all meatball ingredients and form 1-inch balls.
  • Brown meatballs in olive oil, then remove.
  • Sauté onion and garlic until fragrant.
  • Add broth, return meatballs, and simmer for 15 minutes.
  • Add spinach, cook 2-3 minutes, season, and serve garnished with Parmesan.

Use fresh spinach for best flavor and nutrition.
