Turkey & Cranberry Meatballs with Cranberry Orange Sauce

Ingredients
  

Cranberries

  • 1 cup fresh cranberries
  • 2 tsp olive oil
  • 2 cloves garlic (minced)
  • 1 large shallot (finely diced)
  • 1 pound ground Turkey
  • 1 egg egg
  • 1/2 cup shredded apple
  • 1 tsp dried sage
  • 1 tbsp fresh chopped parsley
  • 1/3 cup almond flour
  • 1/2 tsp orange zest
  • 1/4 tsp salt
  • 1/4 tsp pepper

Cranberry Sauce

  • 1 cup fresh or frozen cranberries
  • 1/2 cup orange juice
  • 1/2 tbsp honey (or maple syrup*)

Instructions
 

  • Preheat oven to 175°C (350°F). Bake 1 cup cranberries with 1 tsp olive oil for 20 minutes.
  • Sauté garlic and shallot in 1 tsp olive oil until softened, about 8-10 minutes.
  • Mix ground turkey, egg, apple, sage, parsley, almond flour, orange zest, salt, pepper, and sautéed shallot and garlic. Gently fold in baked cranberries.
  • Form mixture into 20 small meatballs and bake for 18 minutes until golden and cooked through.
  • Simmer cranberries, orange juice, and honey until cranberries pop. Blend into a sauce.
  • Brush meatballs with cranberry sauce, serve with remaining sauce on the side.

Notes

For extra flavor, add a pinch of cinnamon to the cranberry sauce.
