Ingredients
  

Meat

  • 1 lb ground turkey
  • 1 small white onion diced
  • 2 cloves garlic minced or pressed
  • 1 red red bell pepper chopped

Vegetables

  • 1 cup cubed butternut squash about 3 cups
  • 1/2 cup vegetable broth
  • 1 tbsp olive oil

Seasonings

  • 1 tsp smoked paprika
  • salt and pepper salt and pepper to taste

Cheese

  • 3/4 cup gruyère cheese

Herbs

  • to taste fresh cilantro and parsley

Instructions
 

  • Heat olive oil in a skillet. Add turkey, onion, garlic, and bell pepper; cook until meat is no longer pink.
  • Add butternut squash and vegetable broth; cover and simmer for 12 minutes until squash softens.
  • Top with gruyère cheese and bake at 400°F for 5 minutes until cheese melts.
  • Garnish with cilantro and parsley, then serve.

Notes

For extra flavor, sprinkle with additional herbs before serving.
