  • 1 pound ground turkey, dark meat
  • 4 cloves minced garlic
  • 1/2 cup diced onion
  • 1 tablespoon tomato paste
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon ground cumin
  • 1/2 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon arrowroot starch
  • 1/4 cup chicken broth
  • 1 batch cilantro lime coconut rice
  • to taste black beans
  • to taste shredded romaine lettuce
  • to taste avocado
  • to taste pico de gallo
  • to taste sour cream or Greek yogurt
  • to taste sliced radish
  • to taste fresh cilantro

Instructions
 

  • Heat oil in a skillet, cook ground turkey until browned.
  • Add garlic and onion, cook until fragrant and meat is no longer pink.
  • Stir in tomato paste, vinegar, spices, and arrowroot; cook 1 minute.
  • Add chicken broth, simmer until thickened, then remove from heat.
  • Assemble bowls with rice, turkey mixture, beans, lettuce, and toppings.
