Main Ingredients

  • 2 teaspoons extra virgin olive oil
  • 1 pound 93% lean ground turkey
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1/3 cup water
  • 1 tablespoon tomato paste
  • 2 cups cooked rice
  • 1 cup pico de gallo or diced tomatoes
  • 1 cup canned black beans, rinsed and drained
  • 1 avocado sliced
  • 1/4 cup sour cream

Optional Toppings

  • chopped fresh cilantro for garnish

Instructions
 

  • Heat olive oil in a skillet, cook ground turkey for 5 minutes until cooked through.
  • Add taco seasoning, tomato paste, and water; simmer for 2 minutes.
  • Assemble bowls with turkey, rice, pico de gallo, black beans, avocado, and sour cream. Garnish with cilantro if desired.
