Turkey Apple Chili

Ingredients
  

Oil

  • 1 Tbs olive oil

Vegetables

  • 2 cups sliced carrots about 2 large carrots
  • 2 cups sliced sweet potatoes about 2 smaller sweet potatoes
  • 2 cups diced apple from 2 apples

Spices and seasonings

  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt (divided)
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage (divided)
  • 1/2 tsp cinnamon
  • a sprinkle nutmeg

Main protein

  • 2 lbs ground lean turkey

Tomato products

  • 3 Tbs tomato paste
  • 2 tsp chili powder
  • 3 cups crushed tomatoes
  • 2 cups strained tomatoes (or marinara sauce)
  • 1-2 cans kidney beans add at the end if desired

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add apples, sweet potatoes, carrots, and spices; cook for 5 minutes, stirring occasionally.
  • Add ground turkey; cook until no longer pink, about 5-7 minutes.
  • Stir in tomato paste, chili powder, sage, and salt; cook for 1 minute.
  • Add crushed and strained tomatoes; simmer on low for 20-30 minutes. Add kidney beans at the end if desired.
