Ingredients
  

Canned Tuna

  • 1 pouch light tuna in water
  • 0.25 cup finely chopped celery
  • 0.25 cup chopped green onions
  • 0.25 cup sliced water chestnuts, chopped
  • 3 tablespoons chopped sweet red pepper
  • 2 tablespoons reduced-fat mayonnaise
  • 2 teaspoons prepared mustard
  • 2 spinach tortillas 8 inches, room temperature
  • 1 cup shredded lettuce

Instructions
 

  • Drain the tuna and add it to a small bowl. Mix in celery, green onions, water chestnuts, and red pepper.
  • Stir in mayonnaise and mustard until well combined.
  • Spread the tuna mixture over two tortillas and sprinkle with shredded lettuce.
  • Roll up tightly and slice in half to serve, securing with toothpicks if needed.

Notes

Leave tortillas at room temperature or warm them slightly for easier rolling.
