Ingredients
  

Pasta

  • 250 g fusilli pasta

Canned Tuna

  • 185 g canned tuna in spring water

Vegetables

  • 1 cup finely chopped cucumber
  • 1 cup canned corn kernels, rinsed
  • 1 cup diced red capsicum (bell pepper)
  • 1/2 red onion diced red onion

Dressing

  • 2/3 cups plain greek yoghurt
  • 1 tablespoon dijon mustard
  • 1/4 cup fresh lemon juice
  • 2-3 tablespoons minced parsley
  • 2 cloves garlic, minced

Salt + pepper

  • to taste Salt + pepper

Instructions
 

  • Cook pasta until al dente, drain, and place in a large bowl.
  • Mix yoghurt, lemon juice, garlic, parsley, mustard, salt, and pepper to make the dressing.
  • Add capsicum, corn, tuna, cucumber, and onion to the pasta bowl.
  • Pour dressing over the salad and toss gently to combine.

Notes

Chill before serving for best flavor.
