Ingredients
  

Canned Tuna

  • 3 cans tuna in water (drained and flaked)
  • 2 large avocados (peeled, pitted, and diced)
  • 1 large English cucumber (sliced into half moons)
  • 1 small red onion (thinly sliced)
  • ¼ cup chopped parsley or cilantro
  • ¼ cup olive oil
  • 1 lemon juice of 1 lemon
  • to taste salt and freshly ground black pepper

Instructions
 

  • Place drained tuna into a large salad bowl.
  • Add diced avocados, cucumber slices, sliced onions, and herbs; set aside.
  • Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  • Taste and adjust seasonings as needed.
  • Pour dressing over salad and toss to combine. Chill if desired before serving.

Notes

For extra flavor, add a pinch of chili flakes or some chopped cherry tomatoes.
