Ingredients
  

Canned Goods

  • 2 cans tuna in oil or water, drained and flaked

Pasta

  • 12 oz elbow macaroni or penne pasta

Vegetables

  • 2 cups fresh spinach, roughly chopped
  • 1 can diced tomatoes, drained (14 oz)
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 cup cream or milk
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cook pasta according to package instructions, then drain.
  • In a skillet, heat olive oil, sauté garlic until fragrant, then add spinach and cook until wilted.
  • In a bowl, combine pasta, spinach mixture, tuna, tomatoes, cream, cheeses, oregano, salt, and pepper.
  • Transfer to a greased baking dish, top with breadcrumbs and extra cheese.
  • Bake for 25-30 minutes until golden and bubbly.

Notes

Let the dish cool for a few minutes before serving.
