Tomato Lentil Soup

Ingredients
  

Vegetables

  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 1 tbsp tomato paste
  • 1 cup dried brown or green lentils, rinsed
  • 5 cups vegetable broth
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp ground black pepper
  • 1 tsp salt, or to taste
  • 1 bay leaf bay leaf
  • 2 tbsp chopped fresh parsley, optional
  • 1/2 lemon juice of 1/2 lemon

Instructions
 

  • Heat olive oil in a large pot, sauté onion, carrots, and celery for 5 minutes.
  • Add garlic and cook for 1 minute until fragrant.
  • Stir in tomato paste, spices, then add tomatoes, lentils, broth, bay leaf, and salt. Bring to boil.
  • Reduce heat, cover, and simmer for 30 minutes until lentils are tender.
  • Remove bay leaf, stir in lemon juice, adjust seasoning, and serve garnished with parsley if desired.

Notes

This soup is perfect for a healthy, filling meal and can be stored for leftovers.
