Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
Stir in minced garlic and cook for 1 minute. Add chopped tomatoes and cook for 5 minutes until softened.
Pour in vegetable broth, bring to a boil, then simmer uncovered for 20 minutes.
Blend the mixture until smooth using an immersion or standard blender.
Stir in fresh basil leaves; season with salt and pepper. Serve hot.
Notes
For a creamier texture, add a splash of heavy cream or coconut milk.
