Ingredients
  

Marinade and Steak

  • 1 lb flank steak or sirloin, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 unit juice of 1 lime

Other Ingredients

  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup diced tomatoes
  • ½ cup diced onions
  • ½ cup chopped fresh cilantro
  • ½ cup sour cream
  • 1 unit avocado, sliced

Instructions
 

  • Marinate the steak with olive oil, lime juice, garlic, and spices for at least 30 minutes.
  • Cook the marinated steak in a skillet over medium-high heat for 3-4 minutes per side, then rest and slice.
  • Warm tortillas in a skillet or microwave until soft.
  • Assemble burritos by layering rice, beans, steak, cheese, tomatoes, onions, avocado, cilantro, and sour cream on each tortilla, then roll up.
  • Serve sliced in half with extra toppings if desired.

Notes

For extra flavor, marinate the steak longer or add your favorite hot sauce.
