Instructions
Pat chicken dry, season with spices, and sear in batches until golden. Set aside.
Cook pasta in salted boiling water until al dente. Reserve 1-1.5 cups pasta water, then drain.
Sauté diced onion in butter and oil until soft. Add minced garlic and red pepper flakes, cook briefly.
Deglaze pan with chicken broth, then stir in heavy cream and simmer until slightly thickened.
Remove from heat, stir in Parmesan and Pecorino Romano cheeses. Season with salt and pepper.
Return chicken and pasta to skillet, toss with sauce. Add reserved pasta water to adjust consistency. Stir in parsley and optional add-ins. Serve garnished with extra Parmesan and parsley.
