Ingredients
  

Meats

  • 1.5 pounds thin-sliced bacon
  • 1 pound bulk breakfast sausage

Dairy

  • 1.25 pounds cheddar cheese, shredded
  • 4 ounces cream cheese, chopped into chunks
  • 15 large eggs

Vegetables

  • 1/2 cup chopped green onions

Frozen Goods

  • 30 ounces frozen shredded hash browns

Condiments

  • 1/3 cup bacon grease or more
  • 1/4 cup butter for eggs
  • 1/2 cup butter for hash browns (1 stick)
  • 15 10-inch flour tortillas, warmed

Instructions
 

  • Line bacon on baking sheets and bake at 400 degrees F until crisp.
  • Chop cooled bacon into pieces and reserve bacon grease.
  • Cook sausage in a skillet and optionally brown for added texture.
  • Pack frozen hash browns into a patty and cook until crispy.
  • Whisk eggs with seasonings and cook slowly with cream cheese.
  • Warm tortillas, add fillings, fold, and garnish. Wrap burritos in foil for later use.
