Ingredients
  

Protein

  • 1 lb boneless skinless chicken thighs

Grains

  • 1 cup jasmine rice

Liquid

  • 2 cups water or chicken broth

Sauces & Condiments

  • ¼ cup soy sauce
  • ¼ cup mirin
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tablespoon cornstarch mixed with water

Garnishes

  • 2 green onions sliced
  • 1 tablespoon sesame seeds

Optional

  • steamed broccoli or bok choy optional

Instructions
 

  • Cook rice in water or broth for 15 minutes.
  • Mix soy sauce, mirin, brown sugar, sesame oil, garlic, and ginger; marinate chicken for 30 minutes.
  • Cook chicken in a skillet 5-7 minutes per side until done, then rest and slice.
  • Assemble bowls with rice, chicken, and drizzle with reserved marinade; garnish with green onions and sesame seeds.

Notes

Use fresh ginger for best flavor and marinate chicken for at least 30 minutes for tender results.
