Ingredients
  

Chocolate

  • 1 oz semi sweet chocolate (28g)
  • 3 oz high quality dark chocolate, between 60-70% cocoa (85g)
  • 10 tbsp unsalted butter (140g)
  • 3/4 cup sugar (about 165g)
  • 2 eggs eggs, at room temperature
  • 1 tsp instant coffee mixed with 1 tbsp hot water
  • 1/2 cup all purpose flour (about 65g)
  • 1/3 cup cocoa powder (about 35g), Dutch processed preferred
  • 3/4 tsp salt
  • 2 oz chocolate chips or chopped chocolate (55g, mix of milk and semi-sweet)

Instructions
 

  • Preheat oven to 335°F (170°C). Line a 9-inch pan with parchment and butter.
  • Melt butter and chocolates in microwave in 20-second intervals, stirring until smooth.
  • Whisk eggs and sugar until thick and ribbony, about 3-5 minutes.
  • Combine melted chocolate mixture with egg mixture, then fold in coffee, dry ingredients, and chocolate chunks.
  • Pour batter into pan, bake for 20-25 minutes, then cool and cut.

Notes

For extra fudginess, slightly underbake and let cool before slicing.
