Ingredients
  

Vegetables

  • 1 large romaine or butter lettuce
  • 0.5 small red cabbage
  • 0.5 small Napa cabbage
  • 2 to 3 large carrots grated
  • 3 green onions chopped
  • 0.25 cup freshly chopped cilantro
  • 1 cup cooked edamame beans
  • 1 cup canned mandarins drained of juices
  • 0.25 cup sliced almonds
  • 1 cup wonton crisps
  • 0.25 cup soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame seed oil
  • 1 to 2 tbsp honey
  • 1 tbsp sesame seeds
  • 1 tsp grated or pureed ginger

Chicken

  • 4 large boneless, skinless chicken breasts
  • 1 tbsp cooking oil
  • 0.25 cup soy sauce
  • 0.25 cup water
  • 0.25 cup brown sugar
  • 1 tbsp sesame seed oil
  • 1 tbsp rice vinegar
  • 5 to 6 cloves garlic, finely minced or pressed
  • 1 tbsp ginger pureed or grated
  • 1.5 tbsp cornstarch or arrowroot powder
  • 2 tbsp water

Garnish

  • to taste sesame seeds for garnish

Instructions
 

  • Cook chicken breasts in oil until cooked through, then shred or slice.
  • Prepare the dressing by whisking soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger. Thicken with cornstarch mixed with water.
  • In a large bowl, combine chopped lettuce, cabbage, carrots, green onions, cilantro, edamame, mandarins, almonds, and wonton crisps.
  • Add cooked chicken to the salad and toss with dressing. Garnish with sesame seeds.

Notes

For extra flavor, marinate the chicken in soy sauce before cooking.
