Thai Peanut Chicken Noodle Jars

Ingredients
  

Sauce

  • ½ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey (or maple syrup)
  • 1 tbsp sesame oil
  • 1–2 tsp sriracha (optional, for heat)
  • 1 clove garlic, minced
  • 2–3 tbsp warm water (to thin)

Main ingredients

  • 8 oz cooked rice noodles (or soba noodles), cooled
  • 2 cups cooked chicken breast, sliced or shredded
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1 cup thinly sliced bell pepper (red, yellow, or both)
  • ½ cup chopped fresh cilantro
  • ½ cup chopped roasted peanuts

For serving

  • as needed Lime wedges

Instructions
 

  • Whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha (if using), garlic, and warm water to make the sauce.
  • Divide the peanut sauce evenly into 4 jars.
  • Add chicken, then noodles, carrots, cucumber, and bell pepper in layers.
  • Top with cilantro and peanuts, seal, and refrigerate up to 4 days.
  • Shake or toss before serving with lime wedges.

Notes

For extra flavor, add a squeeze of lime before serving.
