Teriyaki Chicken Stir Fry

Ingredients
  

Protein

  • 2 pieces boneless skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Pepper to taste Pepper
  • 3 tablespoons cornstarch
  • 3 tablespoons olive oil divided
  • 1/2 medium onion
  • 2 cups broccoli florets
  • 1/2 red red bell pepper
  • 1/2 cup chicken broth
  • 3 tablespoons mirin see note
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar or apple cider vinegar
  • 1/4 cup brown sugar packed
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic (minced)

Instructions
 

  • Cut chicken into 1" pieces, season with garlic powder and pepper, coat with cornstarch.
  • Heat 2 tbsp oil in a skillet, cook chicken in two batches until browned and cooked through, then set aside.
  • Add onions to the skillet, cook 1 minute, then add broccoli and peppers, cook until tender-crisp.
  • Return chicken to skillet, add sauce, and cook until thickened, then serve immediately.

Notes

Adjust cooking time for softer vegetables if desired.
