Trim fat from chicken, dice into 1-inch pieces, and marinate in a container.
Whisk soy sauce, brown sugar, honey, ginger, garlic, and 1 cup water; add cornstarch slurry and simmer until thickened (10-15 min). Reserve 3/4 cup of sauce.
Refrigerate chicken with marinade; rinse noodles and set aside. Slice onion into half-moons.
