carrots, parsnips, mushrooms, fresh herbs, Worcestershire sauce, heavy cream or cream cheese, chopped parsley
Instructions
Pat beef dry, season with salt, pepper, onion powder, and paprika. Sear in olive oil until browned, then transfer to crockpot.
Melt butter, stir in minced garlic, remaining seasonings, and whisk together.
Place potatoes around and on top of beef in crockpot, pour garlic butter mixture over, then add beef broth. Stir gently.
Cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef and potatoes are tender.
If desired, whisk cornstarch with cold water, add to crockpot, cook on HIGH for 15-30 minutes until thickened. Garnish with parsley before serving.
Notes
For a creamier sauce, add heavy cream or cream cheese during the last step.
