Instructions
Brown the ground beef in a large nonstick pan over medium-low heat.
Add oil, onions, salt, and pepper; sauté for 3-4 minutes. Add beef, break it up, and cook for 2-3 minutes. Add peppers and cook until browned, about 3-4 minutes.
Add tomatoes, tomato paste, taco seasoning, salt, and pepper; stir to combine. Add black beans and warm through for 2-3 minutes. Stir in lime juice.
Sprinkle shredded cheese over the mixture and let melt for 1-2 minutes. Cover if needed.
Top with shredded lettuce, diced tomatoes, avocado, sour cream, and cilantro. Serve with tortilla chips.
Notes
For extra flavor, add a squeeze of lime or hot sauce before serving.
