  • 1 tablespoon extra virgin olive oil
  • 1 pound lean ground beef
  • 1 small yellow onion, chopped
  • 2 red or green bell peppers, chopped bell peppers
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 can low-sodium black beans, rinsed and drained 15 ounces
  • 1 cup long or medium-grain brown rice do not use short grain or instant
  • 1.5 jar chunky salsa mild or medium
  • 2 cups water, divided
  • 1 cup shredded Monterey Jack cheese or swap cheddar, pepper jack, or Mexican blend

Optional for serving

  • to taste chopped fresh cilantro

Optional for making tacos, burritos, or quesadillas

  • as needed warmed whole wheat flour or corn tortillas

Instructions
 

  • Heat olive oil in a skillet over medium heat. Add chopped onion and bell peppers; cook until softened.
  • Add ground beef and cook until browned. Stir in chili powder, garlic powder, cumin, oregano, salt, and pepper.
  • Mix in black beans, salsa, and 1 cup of water; simmer for 10 minutes.
  • Meanwhile, cook rice with remaining water according to package instructions.
  • Combine cooked rice with beef mixture, top with cheese, and serve with cilantro and tortillas if desired.

Notes

For extra flavor, add a squeeze of lime or a dollop of sour cream when serving.
