  • 2 cups shredded chicken (cooked and seasoned) e.g., rotisserie or slow-cooked
  • 2 cups romaine lettuce, chopped
  • 1 can black beans, rinsed and drained
  • 1 cup cherry tomatoes, diced
  • 0.5 cup red onion, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 ripe avocado, sliced
  • 0.5 cup salsa
  • 0.5 cup sour cream
  • 1 tbsp olive oil
  • 1 tsp taco seasoning (optional)
  • to taste Salt and pepper
  • for serving Tortilla chips for serving

Instructions
 

  • Cook and shred the chicken, seasoning with taco seasoning if desired.
  • Layer chopped lettuce in a large bowl, then add shredded chicken on top.
  • Add black beans, diced tomatoes, and chopped red onion over the chicken.
  • Sprinkle shredded cheese, then arrange sliced avocado on top.
  • Add salsa and sour cream, drizzle with olive oil, season with salt and pepper, then gently toss to combine.
  • Serve immediately with tortilla chips on the side.
