Ingredients
  

Grains

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth use chicken broth for more flavor.

Protein

  • 1 lb ground beef or turkey turkey for a lighter option.
  • 1 packet taco seasoning (about 1 oz.)

Canned Goods

  • 1 can black beans (15 oz, drained and rinsed.)
  • 1 cup corn (frozen or canned.)
  • 1 cup diced tomatoes (fresh or canned.)

Vegetables

  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa (for topping.)
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • optional fresh cilantro and lime wedges (for garnish.)

Instructions
 

  • Cook rice in water or chicken broth according to package instructions.
  • In a skillet, heat olive oil over medium heat and cook ground meat until browned.
  • Add taco seasoning, black beans, corn, and diced tomatoes to the skillet; stir to combine.
  • Simmer for 5-10 minutes until heated through.
  • Serve the meat mixture over rice and top with lettuce, cheese, salsa, and optional garnishes.

Notes

For extra flavor, consider adding avocado or jalapeños as toppings.
