Ingredients
  

Meat and Seasonings

  • 1 lb lean ground beef (90/10 recommended)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup beef broth or water

Base and Toppings

  • 4 cups cooked rice or chopped lettuce
  • 1 can black beans, rinsed and drained (15-ounce)
  • 1 can corn, drained (15-ounce)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion finely chopped
  • 1 avocado sliced or cubed
  • 1/2 cup shredded cheddar or Mexican blend cheese

For Serving

  • to taste Sour cream or Greek yogurt
  • to taste Fresh cilantro, chopped
  • to taste Lime wedges

Instructions
 

  • Cook the ground beef in a skillet until browned, then add spices and simmer with broth until thickened.
  • Prepare toppings: chop tomatoes, onion, cilantro, slice avocado, rinse beans and corn.
  • Layer rice or lettuce in bowls, top with seasoned beef, beans, corn, tomatoes, onion, avocado, and cheese.
  • Finish with sour cream, cilantro, and lime wedges for squeezing.
