Ingredients
  

Sweet Potato

  • 8 ounces sweet potato puree
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 1/2 cups brown sugar packed
  • 2 cups flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 pinch ground ginger

Instructions
 

  • Preheat oven to 350°F (175°C) and line muffin tin with liners.
  • Mix sweet potato puree, eggs, oil, water, and sugar until combined.
  • Add dry ingredients and whisk until just mixed.
  • Scoop batter into liners using a 1/4 cup scoop.
  • Bake for 18-20 minutes until a toothpick comes out clean.
