Instructions
Preheat oven to 350°F (175°C) and line muffin tin with liners.
Mix sweet potato puree, eggs, oil, water, and sugar until combined.
Add dry ingredients and whisk until just mixed.
Scoop batter into liners using a 1/4 cup scoop.
Bake for 18-20 minutes until a toothpick comes out clean.
