Ingredients
  

Dry ingredients

  • 230 grams oat flour replace with preferred flour
  • 1 tsp baking soda replace with baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt

Wet ingredients

  • 2 large eggs
  • 180 grams mashed sweet potatoes
  • 100 ml maple syrup replace with honey
  • 60 ml canola oil replace with preferred vegetable oil
  • 1 tsp vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Mix dry ingredients in a bowl.
  • In a separate bowl, whisk eggs, mashed sweet potatoes, honey, oil, and vanilla.
  • Combine wet and dry ingredients until just mixed.
  • Divide batter into muffin tins and bake for 20 minutes.

Notes

For extra flavor, add a handful of chopped nuts or raisins.
