Instructions
Preheat oven to 350°F (175°C).
Mix dry ingredients in a bowl.
In a separate bowl, whisk eggs, mashed sweet potatoes, honey, oil, and vanilla.
Combine wet and dry ingredients until just mixed.
Divide batter into muffin tins and bake for 20 minutes.
