Sweet Potato Hash with Sausage and Eggs

Ingredients
  

Vegetables

  • 2 medium sweet potatoes peeled and diced into small cubes
  • 1 lb sausage use your favorite: Italian, breakfast, or chorizo
  • 4 large eggs
  • 1 small onion finely chopped
  • 1 any color bell pepper diced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper optional for heat
  • to taste Salt and pepper
  • for garnish Fresh parsley or cilantro chopped
  • optional Avocado slices for serving
  • optional Hot sauce for serving

Instructions
 

  • Crumble the sausage and cook in a skillet until browned and crispy, then set aside.
  • In the same skillet, cook sweet potatoes with 1 tbsp olive oil for 8-10 minutes until tender and golden, then remove.
  • Add remaining oil, cook sausage, then add onion, bell pepper, garlic, and spices; cook 3-4 minutes.
  • Return sweet potatoes to skillet, toss to coat, cook 2-3 minutes.
  • Make 4 wells, crack eggs into each, cover, and cook 3-5 minutes until eggs are done to preference. Garnish with herbs and serve with optional toppings.

Notes

For extra flavor, try adding a dash of hot sauce or topping with cheese.
