Instructions
Crumble the sausage and cook in a skillet until browned and crispy, then set aside.
In the same skillet, cook sweet potatoes with 1 tbsp olive oil for 8-10 minutes until tender and golden, then remove.
Add remaining oil, cook sausage, then add onion, bell pepper, garlic, and spices; cook 3-4 minutes.
Return sweet potatoes to skillet, toss to coat, cook 2-3 minutes.
Make 4 wells, crack eggs into each, cover, and cook 3-5 minutes until eggs are done to preference. Garnish with herbs and serve with optional toppings.
Notes
For extra flavor, try adding a dash of hot sauce or topping with cheese.
