1mediumyellow onion, finely diced
2clovesgarlic, minced
1teaspoonsmoked paprika
0.5teaspoondried oregano
0.25cupbeef brothor vegetable broth
2cupsshredded mozzarella cheese
0.25cupfresh parsley, choppedfor garnish
Instructions
Preheat oven to 400°F (200°C). Roast sweet potatoes with olive oil, 1/2 tsp salt, and black pepper for 15-20 minutes until tender.
Brown ground beef in a skillet over medium-high heat, then drain excess grease.
Add diced onion, cook 5-7 minutes, then stir in garlic, paprika, oregano. Pour in broth, simmer 2-3 minutes, then season with remaining salt and pepper.
Spread roasted sweet potatoes in a baking dish, top with beef mixture, then sprinkle cheese on top.
Bake for 10-15 minutes until cheese melts and bubbles. Garnish with parsley before serving.
Notes
For extra flavor, try adding a pinch of chili flakes or your favorite herbs.
