Ingredients
  

Sweet Potatoes

  • 2 pounds sweet potatoes, peeled and diced into 1-inch cubes
  • 1 tablespoon olive oil plus more for cooking
  • 1 teaspoon salt divided
  • 0.5 teaspoon black pepper divided
  • 1.5 pounds lean ground beef (or ground turkey)
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.25 cup beef broth or vegetable broth
  • 2 cups shredded mozzarella cheese
  • 0.25 cup fresh parsley, chopped for garnish

Instructions
 

  • Preheat oven to 400°F (200°C). Roast sweet potatoes with olive oil, 1/2 tsp salt, and black pepper for 15-20 minutes until tender.
  • Brown ground beef in a skillet over medium-high heat, then drain excess grease.
  • Add diced onion, cook 5-7 minutes, then stir in garlic, paprika, oregano. Pour in broth, simmer 2-3 minutes, then season with remaining salt and pepper.
  • Spread roasted sweet potatoes in a baking dish, top with beef mixture, then sprinkle cheese on top.
  • Bake for 10-15 minutes until cheese melts and bubbles. Garnish with parsley before serving.

Notes

For extra flavor, try adding a pinch of chili flakes or your favorite herbs.
